Mother's Day Healthy Snacks workshop

This Mother's Day we not only spent it with our moms but we spent quality time together making something healthy. We were honored to have one our moms lead the event. Mrs. Lunackova, who created a blog on healthy eating called YummyMummyFoodie, was kind enough to share her knowledge of how to make three different snacks. 

The first table was for Date energy balls. This consisted of a sticky mixture made from dates and almond butter. We rolled small portions into balls and then we the choice to roll them in shredded coconut, raw cocoa powder, or crumbled freeze-dried raspberries. This was the busiest table in the room.

The second table had a fresh cheese spread with chives that we were able to spread on low-fat ham. We could add sliced cheese or apples to the roll, and then secure with a toothpick. We also made cute cucumber hearts, stamped out with a cookie-cutter, to accompany the rolls. 

The last table held thin egg omelettes, circular like pancakes. On this was a spread made from dill, salmon, and cream cheese. We also rolled these in themselves and cut into bit size pieces. 

These were also accompanied by other snacks to nibble on while we worked! She graced us with a dip made from beet root with home-made gluten free sesame crackers, and a gluten free cake made from blueberries and rhubarb and almonds. On top of all of this, she brought fruit from Svet Bedynek, which supports local farmers and their products. 

Both children and moms were full of smiles while they worked and nibbled on the yummy creations. We were very happy with how the entire workshop turned out and are looking forward to the next.
