Chefs in Training - Sweet Potato Cake

This cake was easy to make and the children enjoyed themselves. We started by scrubbing the sweet potato and cooking it in the microwave until it was finished, about 5 minutes. After, we smashed it with a banana until the mixture was liquid. This was the hard part because of how to mash the banana correctly. After, we added two eggs, and a tablespoon of olive oil. We only had olive oil but it could've used coconut oil too. After, we added our dry ingredients: cinnamon for taste, baking powder, and almond flour. They mixed until it was combined and then added it to the pan and baked for about 15 minutes. After letting it cool, the children ate it up like crazy! There was nothing left for the other children in the school. Enjoy!
