Chefs in Training - Eggplant Bites

This week the Cooking club made something that not many of them were very interested in. When the eggplants were brought out on the table, each child could identify it in Czech and English, however almost everyone said they didn't like the taste of it. It was a bit harder to get them interested in something no one likes. However, we started by making a flour mixture composed of a half cup of parmesan cheese mixed with whole wheat flour and spices (salt, pepper, oregano). After that, someone cracked and whisked two eggs together, making sure they were well mixed. Once the children had cut up the eggplant into little cubes, we made an assembly line. We started by dropping the eggplant cubes in the egg mix, taking it out and dropping it in the flour mixture, shaking off the excess and dropping it on a baking paper. Once all the cubes were coated, we baked them in our tiny oven till brown and crispy. After taking them out, we mixed white yogurt with garlic powder and salt to make a yummy dipping sauce. Everyone tried one piece and their eyes changed. Most of the children, who said they didn't like eggplant, now did. Quite a successful snack!
